Ingredients
- 1 1/2 cups dried brown lentils, rinsed and picked over
- 1 yellow onion, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes, 14.5 oz
- 6 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 3 cups baby spinach
- 1 lemon, juiced
- 1 crusty bread loaf, for serving; skip or use gluten-free bread if needed

Add the lentils, onion, carrots, celery, garlic, tomatoes, broth, cumin, paprika and salt to the slow cooker and stir.

Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the lentils are completely tender.

Stir in the spinach until wilted, then the lemon juice. Taste and adjust the salt.

Serve with warm crusty bread.
Tip: The soup thickens as it sits; loosen leftovers with a splash of broth or water when reheating.
