    Prep ahead

    2. Slice the fajita vegetables and chicken the night before and store them with the spices in a bag.
    3. Cut the potatoes and carrots ahead and keep them in water in the fridge; pat them dry before roasting so they brown.

    Questions

    Why are my sheet pan vegetables soggy?

    The pan is too crowded. Vegetables need space to brown; if they overlap, they steam. Use two pans, or a larger one, and keep the oven at 425°F.

    What size sheet pan do I need?

    A standard half-sheet pan (18 x 13 inches) fits each recipe for four. Use two if your oven only fits quarter sheets.
