Slow Cooker Honey Garlic Chicken
Sticky, sweet-savory chicken thighs that kids reliably finish. The sauce thickens at the end into a glaze for rice and vegetables.

Ingredients
- 2 lb boneless skinless chicken thighs
- 1/3 cup honey
- 1/3 cup low-sodium soy sauce, or tamari for gluten-free
- 6 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp rice vinegar
- 2 tbsp cornstarch
- 2 cups jasmine rice, uncooked, for serving
- 12 oz broccoli florets
- 2 green onions, sliced

Arrange the chicken in the slow cooker. Whisk the honey, soy sauce, garlic, ketchup and vinegar and pour it over.

Cover and cook on low for 4 hours or on high for 2 hours, until the chicken reaches 165°F (74°C).

Move the chicken to a plate. Whisk the cornstarch with 2 tablespoons of cold water, stir it into the sauce, and cook on high, uncovered, for 10 to 15 minutes until glossy and thick.

Meanwhile, cook the rice and steam the broccoli until bright green and just tender, 4 to 5 minutes.

Slice or shred the chicken, return it to the sauce, and serve over rice with broccoli and green onions.
