Ingredients
- 1 can black beans, 15 oz, drained and rinsed
- 1 cup frozen corn, thawed
- 1 tsp ground cumin
- 2 cups shredded Monterey Jack cheese
- 8 flour tortillas, 8-inch
- 1 tbsp butter
- 1/2 cup salsa, for serving
- 1/2 cup sour cream, for serving

Mash the black beans roughly with a fork and stir in the corn and cumin.

Spread the bean mixture over half of each tortilla, top with cheese, and fold in half.

Melt a little butter in a large skillet over medium heat. Cook the quesadillas two at a time, 2 to 3 minutes per side, until golden and the cheese is melted.

Cut into wedges and serve with salsa and sour cream.
