    Slow Cooker Salsa Chicken

    Ingredients

    • 2 lb boneless skinless chicken breasts
    • 1 1/2 cups salsa
    • 1 tbsp taco seasoning, check the label if gluten-free
    • 1 can black beans, 15 oz, drained and rinsed
    • 1 cup frozen corn
    • 2 cups long-grain white rice, uncooked, for serving
    • 1 lime

    Instructions

      Put the chicken in the slow cooker, sprinkle with the taco seasoning and pour the salsa over the top.

      Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours, until the chicken reaches 165°F (74°C) and shreds easily.

      Shred the chicken in the cooker with two forks. Stir in the black beans and corn, cover, and cook 15 minutes more to heat through.

      Meanwhile, cook the rice according to the package directions.

      Squeeze the lime over the chicken and serve over rice, or in tortillas.

    Tip: Leftovers keep 4 days in the fridge and make an easy lunch with rice and a spoonful of sour cream.
