    Lemon Garlic Shrimp and Rice

    Ingredients

    • 1 1/2 lb large shrimp, peeled and deveined, thawed if frozen
    • 1/2 tsp kosher salt
    • 1/4 tsp red pepper flakes
    • 2 tbsp olive oil
    • 3 tbsp butter
    • 5 cloves garlic, minced
    • 1 lemon, zested and juiced
    • 3 cups baby spinach
    • 2 tbsp fresh parsley, chopped
    • 1 1/2 cups long-grain white rice, uncooked, for serving

    Instructions

      Cook the rice according to the package directions.

      Pat the shrimp dry and season with the salt and red pepper flakes.

      Heat the olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook 1 1/2 minutes per side until pink and just opaque. Transfer to a plate.

      Lower the heat to medium, add the butter and garlic, and cook 30 seconds. Add the spinach and lemon juice and stir until the spinach wilts.

      Return the shrimp, toss with the lemon zest and parsley, and serve over rice.
