20-Minute Beef and Broccoli
Takeout-style beef and broccoli with a glossy garlic-ginger sauce, on the table faster than delivery.

Ingredients
- 1 1/4 lb flank steak, thinly sliced against the grain
- 2 tbsp cornstarch, divided
- 1/3 cup low-sodium soy sauce, or tamari for gluten-free
- 2 tbsp brown sugar
- 1 tbsp oyster sauce
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp vegetable oil, divided
- 1 lb broccoli florets
- 1 1/2 cups jasmine rice, uncooked, for serving

Start the rice. Toss the sliced beef with 1 tablespoon of the cornstarch.

Whisk the soy sauce, brown sugar, oyster sauce, garlic, ginger, the remaining cornstarch and 1/2 cup of water in a bowl.

Heat 1 tablespoon of the oil in a large skillet or wok over high heat. Add the broccoli and 2 tablespoons of water, cover, and cook 3 minutes until bright green. Transfer to a plate.

Add the remaining oil and sear the beef in a single layer, in two batches if needed, about 1 minute per side.

Return the broccoli, pour in the sauce, and toss for 1 to 2 minutes until the sauce is glossy and thick. Serve over rice.
Tip: Freeze the steak for 20 minutes before slicing; it firms up and slices thin much more easily.
